One-Pot Chicken Fajita Pasta

12 ounces fettuccine or penne pasta

1 pound boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 can (14.5 ounces) diced tomatoes, undrained

3 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced chicken and season with garlic powder, chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink. Remove the chicken from the pot and set aside.

    Cook the Veggies: In the same pot, add the sliced onion and bell peppers. Sauté for about 4-5 minutes until the vegetables are tender and slightly caramelized.

      Combine Ingredients: Add the cooked chicken back into the pot with the vegetables. Pour in the diced tomatoes (with their juices) and the chicken broth. Stir in the uncooked pasta, ensuring it’s well combined.

        Cook the Pasta: Bring the mixture to a boil. Reduce heat to low, cover, and simmer for about 12-15 minutes or until the pasta is al dente, stirring occasionally to prevent sticking.

          Finish with Cream and Cheese: Once the pasta is cooked, stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is melted and creamy. If the pasta is too thick, you can add a bit more chicken broth to reach your desired consistency.
