Ingredients

8 oz elbow macaroni

2 cups vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Sauté Aromatics: In a large pot over medium heat, add olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Cook Pasta: Add the elbow macaroni to the pot and stir to combine with the onion and garlic. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and cook uncovered for about 8-10 minutes, stirring occasionally, until the pasta is al dente.

Add Cream and Vinegar: Once the pasta is cooked, stir in the heavy cream, balsamic vinegar, and dried thyme. Mix well and allow to simmer for another 2-3 minutes, so the flavors meld.

Incorporate Cheeses: Gradually add the cheddar, mozzarella, and Parmesan cheeses, stirring continuously until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

Final Touch & Serve: Toss everything together and let it sit for a minute to thicken if needed. Garnish with fresh basil, if desired, and serve hot!
