Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

8 ounces fettuccine pasta

4 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon fresh lemon juice

1 teaspoon red pepper flakes (adjust to taste)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Cook the Fettuccine: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

Sear the Chicken: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the chicken pieces and season with salt and black pepper. Sear for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Garlic: In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Once the butter is melted, add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Make the Sauce: Pour in the chicken broth and bring to a simmer. Cook for about 2-3 minutes to reduce slightly. Then stir in the heavy cream, lemon juice, and remaining butter. Let the sauce simmer for about 3-4 minutes until slightly thickened.

Combine Ingredients: Add the seared chicken and cooked fettuccine to the skillet. Toss everything together to coat in the creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Finish with Cheese and Parsley: Stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning if necessary.

Serve: Divide the chicken scampi into bowls, garnishing with chopped parsley and additional Parmesan cheese if desired. Serve with lemon wedges on the side for a fresh burst of flavor.
