1 pound (450g) boneless, skinless chicken breast, sliced into thin strips

3 cups fresh green beans, trimmed and cut into 2-inch pieces

1 medium red bell pepper, thinly sliced

1 cup snow peas, trimmed

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (or low-sodium soy sauce)

2 tablespoons oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil (for frying)

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Cooked brown rice or quinoa (for serving)

Sesame seeds and sliced green onions (for garnish)

Prepare the Chicken: In a large bowl, marinate the sliced chicken breast with 1 tablespoon of soy sauce, a pinch of salt, and a bit of pepper. Let it sit for about 15 minutes while you prepare the vegetables.

    Blanch the Green Beans: Bring a pot of water to a boil, then add the green beans. Blanch for 2-3 minutes until bright green and crisp-tender. Immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.
