Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 ½ cups heavy whipping cream

2 cups mixed seasonal fruits (such as strawberries, blueberries, peaches, and kiwi), chopped

¼ cup apricot preserves (for glaze)

Fresh mint leaves (for garnish)

Instructions

Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined and the mixture resembles wet sand. Press the mixture evenly into the bottom and up the sides of a tart pan. Use the back of a measuring cup to compact it nicely. Chill the crust in the refrigerator for about 30 minutes to firm up.

Make the Cream Cheese Filling: In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Assemble the Tart: Once the crust has set, spread the cream cheese filling evenly over the graham cracker crust. Smooth the top with a spatula.

Add the Fruits: Arrange the chopped mixed fruits artfully on top of the cream cheese filling, covering it completely for a vibrant look.

Glaze the Tart: In a small saucepan, gently heat the apricot preserves until it melts slightly (1-2 minutes). Once melted, brush the preserves over the fruit to give it a shiny finish and add a touch of sweetness.

Chill and Serve: Refrigerate the tart for at least 2 hours to set before slicing. Garnish with fresh mint leaves just before serving for an extra touch of freshness.
