1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, hulled and sliced

1 tablespoon lemon juice

2 tablespoons gelatin powder (optional, for firmer texture)

1/4 cup water (if using gelatin)

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are moistened.

    Press the crust: Line an 8x8 inch baking pan with parchment paper. Press the graham cracker mixture firmly into the bottom of the pan to create an even layer. Chill in the refrigerator while you prepare the cheesecake filling.

      Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar and vanilla extract, continuing to mix until well incorporated.

        Whip the cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined, being careful not to deflate the cream.
