2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

8 oz cream cheese, softened

1/2 cup Greek yogurt (plain or vanilla)

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Base: In a medium mixing bowl, combine the graham cracker crumbs with the melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch round springform pan to form the crust. Place in the refrigerator to set while you prepare the filling.

    Whip the Cream: In a large mixing bowl, use an electric mixer to whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form. Set aside.

      Make the Cream Cheese Filling: In another bowl, beat the softened cream cheese until smooth. Add the Greek yogurt and mix until well combined and creamy. Gently fold the whipped cream into the cream cheese mixture in batches, being careful not to deflate the mixture.

        Assemble the Layers: Spoon half of the cream cheese mixture over the chilled graham cracker crust and smooth it into an even layer. Top it with half of the sliced strawberries. Repeat with the remaining cream cheese mixture and finish with the remaining strawberries on top.

          Chill: Cover the pan with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight for best results, until set and firm.

            Serve: Once set, carefully remove the sides of the springform pan. Slice into wedges and serve chilled. Garnish each slice with fresh mint leaves for an added touch of color and flavor.
