For the Base:

200g (7 oz) digestive biscuits or graham crackers, crushed

100g (3.5 oz) unsalted butter, melted

2 tbsp granulated sugar (optional)

For the Caramel Layer:

300g (10.5 oz) sweetened condensed milk

100g (3.5 oz) unsalted butter

150g (5.3 oz) brown sugar, packed

1 tsp vanilla extract

A pinch of sea salt

For the Chocolate Topping:

200g (7 oz) dark chocolate, chopped (around 70% cocoa)

50g (1.75 oz) milk chocolate (optional, for drizzling)

A few flakes of sea salt, for garnish

Instructions
 

Prepare the Base:

    - In a large mixing bowl, combine the crushed digestive biscuits or graham crackers and granulated sugar.

      - Stir in the melted butter until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9x9-inch (23x23 cm) square baking dish lined with parchment paper. Use a flat-bottomed glass to ensure it’s compact and even.

          - Place in the refrigerator to set while you prepare the caramel layer.

            Make the Caramel Layer:

              - In a medium saucepan over medium heat, combine the sweetened condensed milk, unsalted butter, brown sugar, and a pinch of sea salt.

                - Stir continuously for about 8-10 minutes, allowing the mixture to come to a simmer.

                  - Once thickened and a golden caramel color is achieved, remove from heat and stir in the vanilla extract.

                    - Let it cool slightly before pouring the caramel layer over the chilled base. Spread evenly with a spatula and refrigerate for at least 1 hour or until set.

                      Prepare the Chocolate Topping:

                        - In a microwave-safe bowl, place the chopped dark chocolate. Microwave in 30-second intervals, stirring in between until completely melted and smooth.

                          - Pour the melted dark chocolate over the set caramel layer, smoothing it out with a spatula.

                            - If using milk chocolate, melt it separately and drizzle over the dark chocolate layer for a decorative touch. Sprinkle a few flakes of sea salt over the top.

                              Final Chill:

                                - Return the pan to the refrigerator for another hour to let the chocolate layer set completely.

                                  Serve:

                                    - Once fully set, lift the shortbread from the pan using the parchment paper and slice into squares or bars.
