1 cup rolled oats

1/2 cup creamy almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/2 cup ground flaxseed

1/2 cup mini dark chocolate chips

1/4 cup shredded coconut (unsweetened)

1 tsp vanilla extract

Instructions
 

In a large mixing bowl, combine the rolled oats, ground flaxseed, shredded coconut, and a pinch of sea salt. Mix well to evenly distribute the dry ingredients.

    In a separate bowl, whisk together the almond butter and honey (or maple syrup) until smooth. Add in the vanilla extract and mix until well combined.

      Pour the wet mixture over the dry ingredients in the large bowl, mixing with a spatula or your hands until the mixture is thoroughly combined and sticky.

        Fold in the mini dark chocolate chips until evenly distributed throughout the mixture.

          Use your hands to roll the mixture into bite-sized balls, about 1 inch in diameter. If the mixture is too sticky, wet your hands slightly to make rolling easier.

            Place the formed energy bites on a parchment-lined baking sheet or plate.

              Once all the mixture is rolled into bites, refrigerate them for at least 30 minutes to set. This helps them hold their shape better.
