1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 2 lemons

Fresh berries (strawberries, blueberries, or raspberries) for garnish

Lemon slices for garnish (optional)

Prepare the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

    Layer the crust: In serving glasses or jars, add about 2 tablespoons of the graham cracker mixture to the bottom of each. Press down gently to form an even layer.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy. Gradually add the powdered sugar while mixing, followed by the vanilla extract, lemon juice, and lemon zest. Mix until everything is well combined and smooth.
