Ingredients

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1 cup chocolate chips (dark or semi-sweet)

1/2 cup unsweetened cocoa powder

1/4 teaspoon salt

Optional toppings: chopped nuts, shredded coconut, or sea salt

Instructions

Prepare the Base: In a medium mixing bowl, combine the creamy peanut butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

Combine Dry Ingredients: In another bowl, combine the rolled oats, cocoa powder, and salt. Mix until evenly distributed.

Mix Ingredients Together: Gradually add the dry mixture to the peanut butter mixture, stirring until fully combined. You might have to use your hands for a few moments to ensure everything is mixed well.

Add Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the mixture.

Press into a Pan: Line an 8-inch square baking dish with parchment paper, leaving some excess hanging over the sides. Pour the mixture into the pan and press it down firmly to create an even layer.

Chill: Refrigerate the bars for at least 1-2 hours, or until firm. This will make cutting them much easier.

Cut and Serve: Once chilled, remove the bars from the pan using the parchment paper and cut them into squares or bars. If desired, sprinkle some chopped nuts, shredded coconut, or sea salt on top before serving.

Store: Keep any leftover bars in an airtight container in the refrigerator for up to a week.
