1 lb ground beef

1 lb ground pork

1 cup finely chopped mushrooms (preferably Cremini or Button)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup Swiss cheese, shredded

1 cup breadcrumbs (preferably Italian seasoned)

2 large eggs

1/4 cup milk

2 tbsp Worcestershire sauce

1 tsp mustard (Dijon or yellow)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1/2 cup ketchup (for glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Once hot, add the chopped onions and garlic and sauté until translucent, about 5 minutes. Add the chopped mushrooms and cook until softened, about another 5 minutes. Remove from heat and let cool slightly.

      Mix the Meat Mixture: In a large mixing bowl, combine the ground beef and ground pork. Add in the sautéed onion and mushroom mixture, breadcrumbs, shredded Swiss cheese, eggs, milk, Worcestershire sauce, mustard, salt, and pepper. Mix gently until combined, being careful not to overwork the meat.

        Form the Loaf: Transfer the meat mixture into a greased loaf pan (or shape on a lined baking sheet). Gentle press it into a loaf shape, smoothing out the top with a spatula.

          Glaze the Meatloaf: Spread the ketchup evenly over the top of the meatloaf, creating a thin layer.

            Bake: Place the meatloaf in the preheated oven and bake for about 60-75 minutes or until the internal temperature reaches 160°F (70°C). Selectively baste with any drippings halfway through cooking for added moisture (optional).
