1 lb ground beef (preferably grass-fed)

8 oz egg noodles or rice noodles

1 tablespoon vegetable oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1 inch piece of ginger, minced

1 cup bell pepper, thinly sliced (red or green)

1 carrot, julienned

1 cup green onions, chopped (reserve some for garnish)

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Sesame seeds for garnish (optional)

Cook the Noodles: Begin by cooking the egg or rice noodles according to the package instructions. Drain and set aside. Drizzle a little oil over the noodles to prevent them from sticking together.

    Sauté the Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onions, minced garlic, and ginger. Sauté for about 2-3 minutes until the onions become translucent.

      Add Beef and Veggies: Increase the heat to high and add the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary. Add the bell pepper and carrot, and cook for an additional 3 minutes until the veggies are tender-crisp.

        Flavor the Mixture: Stir in the soy sauce, oyster sauce, hoisin sauce, sesame oil, and red pepper flakes. Mix everything thoroughly and let it cook for about 2 minutes to combine the flavors. Taste and season with salt and pepper as needed.

          Combine Noodles and Beef Mixture: Add the cooked noodles to the skillet, tossing everything together until the noodles are well coated with the sauce and heated through.
