1 package (8 oz) refrigerated crescent roll dough

8 slices turkey bacon

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup chopped fresh spinach (optional)

1/4 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1 tbsp olive oil

1 tbsp minced chives (for garnish)

Prep the Bacon: In a skillet over medium heat, cook the turkey bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease. Cut each slice into halves or thirds (depending on the size you want for your rolls) and set aside.

    Scramble the Eggs: In a medium bowl, whisk together the eggs, salt, pepper, and garlic powder. In the same skillet, add the olive oil and scramble the eggs over medium heat until just set, about 3-4 minutes. If using, fold in the chopped spinach during the last minute of cooking. Remove from heat.

      Roll It Up: Preheat your oven to 375°F (190°C). Unroll the crescent roll dough on a clean surface and separate it into individual triangles. Place a spoonful of scrambled egg mixture at the wider end of each triangle, then top with 1-2 pieces of turkey bacon and a sprinkle of shredded cheddar cheese.

        Shape the Rolls: Starting from the wide end of each triangle, carefully roll it up towards the pointed end. Pinch the ends to seal and place them seam-side down on a baking sheet lined with parchment paper.

          Bake: Bake in the preheated oven for 12-15 minutes, or until golden brown and bubbly.
