8 mini sweet peppers (assorted colors)

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1 cup shredded sharp cheddar cheese

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the mini sweet peppers and remove the seeds carefully. Place them upright on a baking sheet lined with parchment paper.

      Make the Tuna Filling: In a mixing bowl, combine the drained tuna, mayonnaise, chopped celery, chopped red onion, shredded cheddar cheese, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Stuff the Peppers: Using a spoon, fill each mini pepper with the tuna mixture, pressing gently to pack it in well.
