4 medium sweet potatoes

4 large eggs

1 cup black beans, rinsed and drained

1 ripe avocado, diced

½ cup cherry tomatoes, halved

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

¼ cup fresh cilantro, chopped (for garnish)

½ lime, juiced

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly, and pierce them several times with a fork. Place them on a baking sheet lined with parchment paper, drizzling with a little olive oil and sprinkling with salt.

      Bake: Roast sweet potatoes in the preheated oven for about 45-50 minutes, or until they are tender and easily pierced with a fork.

        Cool and Slice: Once cooked, remove sweet potatoes from the oven and let them cool for about 10 minutes. Carefully slice them in half lengthwise and scoop out a small amount of the flesh, creating a boat.

          Cook the Eggs: In a frying pan over medium heat, add a splash of olive oil. Crack one egg into each sweet potato half, season with cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, until the eggs are set to your desired doneness. You can also cover the pan with a lid to help the eggs cook through.
