Mini Spinach Artichoke Biscuit Bombs

1 can (16 oz) refrigerated biscuit dough

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

½ cup cream cheese, softened

¼ cup sour cream

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

2 cloves garlic, minced

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

Olive oil spray

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, onion powder, salt, and black pepper. Mix until all ingredients are thoroughly combined and creamy.

      Prepare the Biscuit Dough: Open the can of biscuit dough and separate the biscuits. Each biscuit will become a bomb.

        Fill the Biscuits: Take a biscuit and flatten it out with your fingers or a rolling pin to create a small disc. Place about a tablespoon of the spinach artichoke filling in the center.

          Form the Bombs: Carefully fold the edges of the biscuit dough over the filling to encase it completely. Pinch the edges to seal. Repeat for the remaining biscuits and filling.

            Arrange on Baking Sheet: Place the filled biscuit bombs seam-side down on the prepared baking sheet. Make sure they are spaced apart as they will expand while baking.

              Spray with Olive Oil: Lightly spray the tops of the biscuit bombs with olive oil. This helps them to become golden brown and crisp while baking.

                Bake: Bake in the preheated oven for 15-20 minutes or until the biscuit bombs are golden brown and cooked through.
