Ingredients

24 Oreo cookies (divided)

6 tablespoons unsalted butter (melted)

16 oz cream cheese (softened)

½ cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

Optional: additional crushed Oreos for topping

Instructions

Prepare the crust: Place 12 Oreo cookies in a food processor and pulse until finely crushed. Combine the crushed cookies with melted butter in a mixing bowl and stir until evenly combined.

Form the crusts: Line a muffin tin with cupcake liners. Spoon about 1 tablespoon of the Oreo mixture into each liner, pressing down firmly to create an even layer. Set aside.

Make the filling: In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract using an electric mixer until smooth and creamy.

Whip the cream: In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined, careful not to deflate the whipped cream.

Assemble the cheesecakes: Spoon the cream cheese filling over the crusts in the muffin tin, filling each liner until just full. Smooth the tops with a spatula if needed.

Chill: Place the muffin tin in the refrigerator and chill for at least 4 hours or until the cheesecakes are set.

Serve: Once set, remove the cheesecakes from the muffin tin. Top with crushed Oreos if desired and serve chilled.
