4 large whole wheat tortillas or pita bread

1 cup of prepared hummus (store-bought or homemade)

1 cup of diced cucumbers

1 cup of cherry tomatoes, halved

1/2 cup of red onion, thinly sliced

1/2 cup of Kalamata olives, pitted and sliced

1/2 cup of crumbled feta cheese

1/2 cup of arugula or spinach

1/4 cup of fresh parsley, chopped

Juice of 1 lemon

Olive oil for drizzling

Salt and pepper to taste

Instructions
 

Prepare Ingredients: Start by washing and chopping all your fresh vegetables. Dice the cucumbers, halve the cherry tomatoes, thinly slice the red onion, and pit and slice the Kalamata olives.

    Mix the Filling: In a large mixing bowl, combine the cucumbers, cherry tomatoes, red onion, Kalamata olives, crumbled feta cheese, arugula or spinach, and chopped parsley. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Gently toss everything together until well mixed.

      Spread the Hummus: Lay out the tortillas or pita bread on a clean surface. Spread a generous layer of hummus evenly across each wrap, covering the entire surface.

        Add the Filling: Spoon the vegetable and feta mixture onto the hummus-covered wraps, making sure to leave about an inch of space around the edges for easy rolling.

          Roll the Wraps: Carefully roll each wrap tightly from one end to the other. If using pita bread, fold in the sides before rolling from the end to secure the filling.

            Slice and Serve: With a sharp knife, slice each rolled wrap in half or into smaller pinwheel sections for bite-sized portions. Arrange on a serving platter.

              Garnish: Drizzle any remaining olive oil over the top and sprinkle with extra parsley if desired before serving.
