1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

½ cup diced tomatoes (drained)

½ cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1 package wonton wrappers (about 48)

Cooking spray or additional olive oil for greasing

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Salsa (for serving)

Jalapeño slices (optional, for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Season the Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary. Mix in the taco seasoning, diced tomatoes, and black beans, stirring to combine. Allow the mixture to simmer for about 2-3 minutes for the flavors to meld.

        Prepare Wonton Wrappers: While the chicken mixture is simmering, lightly grease a muffin tin with cooking spray or a brush of olive oil. Carefully take one wonton wrapper and press it into each muffin cup, allowing the edges to hang over the sides. Repeat until all cups are lined.

          Fill the Cups: Spoon the chicken mixture evenly into each wonton cup. Top each with a generous sprinkle of shredded cheddar cheese.

            Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the wontons are golden brown and the cheese is bubbly and melted.

              Garnish and Serve: Remove from the oven and allow to cool for 5 minutes. Carefully remove the mini taco cups from the muffin pan. Garnish with fresh cilantro and jalapeño slices if desired. Serve warm with sour cream and salsa on the side.
