1 lb ground chicken

1 taco seasoning packet

1 cup shredded cheddar cheese

1/2 cup diced tomatoes (fresh or canned, drained)

1/4 cup finely chopped red onion

1/4 cup sliced black olives (optional)

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Cooking spray or olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray or olive oil.

    Cook the Chicken: In a medium skillet over medium heat, add the ground chicken. Season with salt, pepper, and sprinkle the taco seasoning on top. Cook until the chicken is browned and cooked through, about 7-10 minutes. Stir occasionally to crumble the chicken.

      Prepare the Biscuits: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a round shape using your hands or a rolling pin to create a small disk.

        Assemble the Melts: On half of each flattened biscuit, spoon a generous amount of cooked chicken mixture (about a tablespoon). Top the chicken with a sprinkle of cheddar cheese, diced tomatoes, red onion, and black olives if using.
