Ingredients

4 large flour tortillas

1 cup cooked chicken, shredded

1 cup ranch dressing

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup sliced black olives (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Fresh cilantro or parsley, for garnish

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Tortillas: Lightly brush both sides of each tortilla with olive oil to encourage a nice crispness when baking. Place the tortillas on a baking sheet lined with parchment paper.

Mix the Chicken: In a medium bowl, combine the shredded chicken, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until the chicken is well-coated.

Assemble the Pizzas: Spread 1/4 cup of the chicken mixture evenly over each tortilla. Top with shredded mozzarella cheese, halved cherry tomatoes, chopped red onion, and sliced black olives if using.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and the edges of the tortillas are golden brown.

Garnish: Once done, remove the pizzas from the oven. Let them cool for a minute, then sprinkle with fresh cilantro or parsley for an added burst of flavor and freshness.

Slice and Serve: Cut the pizzas into quarters and serve warm. They make for a delightful appetizer, snack, or easy weeknight dinner!
