Ingredients

1 lb ground beef (80/20 for optimal flavor)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 large head of romaine lettuce or butter lettuce

1/2 cup cherry tomatoes, halved

1/4 cup pickles, sliced

1/4 cup red onion, thinly sliced

1/4 cup ketchup

1/4 cup mustard

Optional: fresh herbs (like parsley or cilantro) for garnish

Instructions

Prepare the Beef Mixture: In a large mixing bowl, combine the ground beef, garlic powder, onion powder, paprika, salt, and pepper. Mix with your hands until just combined; avoid overmixing for a tender bite.

Form the Patties: Divide the beef mixture into small portions, shaping each into mini patties that are about 1 to 1.5 inches in diameter. Aim for 12 patties total.

Cook the Patties: Heat a grill pan or skillet over medium-high heat. Cook the patties for about 3-4 minutes on one side until nicely browned. Flip, top each with a sprinkle of cheddar cheese, and cook for another 2-3 minutes or until desired doneness is reached and cheese has melted.

Prepare the Lettuce Wraps: While the patties are cooking, carefully wash the romaine or butter lettuce leaves. Pat them dry with a paper towel; these will serve as the wraps.

Assemble the Stacks: To create your mini stacks, place one lettuce leaf on a plate, then add a mini cheeseburger patty on top. Layer with cherry tomatoes, pickles, red onion slices, and a drizzle of ketchup and mustard. Repeat the process to create 2-3 stacked layers per serving.

Garnish and Serve: Garnish with fresh herbs if desired and serve immediately while the patties are warm. Enjoy your delicious, low-carb, and fun twist on cheeseburgers!
