1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1/2 cup sour cream

For the apple topping:

1 medium apple, peeled, cored, and diced (granny smith or honeycrisp work well)

1 tablespoon brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

For the caramel sauce:

1/2 cup caramel sauce (store-bought or homemade)

Preheat the Oven: Preheat your oven to 325°F (165°C) and line a mini muffin pan with mini cupcake liners.

    Make the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until everything is evenly coated. Press about 1 tablespoon of this mixture into the bottom of each cupcake liner to form the crust.
