4 large eggs

1 cup shredded mozzarella cheese

1/2 cup diced green chilies (fresh or canned, mild or hot based on preference)

1/2 cup diced bell peppers (red or green)

1/4 cup diced onion

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Olive oil for drizzling

    Prepare the Pizza Crusts: Place the pizza crusts (or English muffins) on a baking sheet lined with parchment paper for easy cleanup.

      Sauté the Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and bell peppers. Sauté for about 3-4 minutes until the vegetables are soft. Stir in the diced green chilies, garlic powder, paprika, salt, and pepper, and cook for another 1-2 minutes. Remove from heat.

        Assemble the Pizzas: On each pizza crust, sprinkle a layer of shredded mozzarella cheese. Next, distribute the sautéed vegetable mixture evenly over the cheese.
