Ingredients
  

4 large eggs

1/4 cup whole milk

1/2 cup cooked chorizo sausage, crumbled

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup finely chopped onion

1/2 cup shredded sharp cheddar cheese

8 small flour tortillas (about 6 inches)

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Olive oil or cooking spray, for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Whisk Eggs: In a medium-sized bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.

      Cook Ingredients: In a skillet over medium heat, add a splash of olive oil or cooking spray. Sauté the onions and bell peppers for 3-4 minutes, or until softened. Add the crumbled chorizo and cook for another 2-3 minutes until heated through.

        Combine Ingredients: Remove the skillet from heat and stir the cooked chorizo mixture into the egg mixture. Add the shredded cheese and mix until just combined.

          Prepare Tortillas: On a baking sheet, place the small tortillas. Spoon about 2-3 tablespoons of the egg and chorizo mixture onto the center of each tortilla.

            Fold Tortillas: Fold the sides of each tortilla over the filling, then roll from the bottom up to create a bite-sized burrito. Make sure to tuck in the edges as you roll to prevent spillage.

              Bake: Place the rolled burritos seam-side down on the baking sheet. Lightly spray the tops with cooking spray or brush with olive oil. Bake in the preheated oven for about 15-20 minutes, until the tortillas are golden and crispy.

                Serve: Remove from the oven and let cool slightly. Garnish with fresh cilantro, if desired. Serve these bite-sized breakfast burritos warm with salsa or your favorite dipping sauce on the side.
