1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/4 cup sugar

1 cup whole milk

2 large eggs

1/4 cup melted butter

1 cup shredded sharp cheddar cheese

1/4 cup chopped green onions (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Spray a mini muffin tin with cooking spray to prevent sticking.

    Prepare the BBQ Chicken: In a mixing bowl, combine the shredded chicken and BBQ sauce. Mix well until the chicken is thoroughly coated. Set aside to let the flavors meld.

      Mix Dry Ingredients: In a separate large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar until well combined.

        Mix Wet Ingredients: In another bowl, whisk together the milk, eggs, and melted butter. Pour this wet mixture into the dry ingredients and stir until just combined—be careful not to overmix.
