12 oz (340g) penne pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 can (15 oz) chickpeas, drained and rinsed

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 cup feta cheese, crumbled

1 cup marinara sauce

1/2 cup black olives, sliced (Kalamata or any preferred variety)

1 cup shredded mozzarella cheese

Fresh parsley or basil for garnish

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Cook Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook until al dente according to package instructions. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until it becomes translucent. Add the minced garlic, bell pepper, and zucchini, and cook for an additional 5 minutes until the vegetables are tender.

        Combine Ingredients: In the same skillet, stir in the cherry tomatoes, chickpeas, dried oregano, dried basil, crushed red pepper flakes (if using), salt, and pepper. Cook for another 3-4 minutes until the tomatoes have slightly softened.

          Mix Pasta and Sauce: In a large mixing bowl, combine the cooked penne pasta, the sautéed vegetable mixture, marinara sauce, crumbled feta cheese, and sliced olives. Toss everything together until well combined.

            Layer in Baking Dish: Transfer the mixture to a greased 9x13 inch (3L) baking dish. Spread it out evenly and top with shredded mozzarella cheese.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley or basil before serving.
