Mediterranean Couscous Salad

Ingredients
  

1 cup couscous

1 1/4 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, remove from heat and stir in the couscous. Cover the saucepan and let it sit for about 5 minutes or until the couscous has absorbed the liquid.

    Fluff the couscous with a fork and transfer it to a large mixing bowl. Allow it to cool for about 10 minutes.

      While the couscous is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.

        Once the couscous has cooled, add the cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese to the bowl.

          In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.

            Pour the dressing over the couscous salad, and carefully toss everything together until well combined.

              Finally, sprinkle the chopped parsley and mint over the salad, and gently fold them in. Taste and adjust seasoning if needed.

                Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
