Ingredients

1 ½ cups all-purpose flour

½ teaspoon salt

½ cup unsalted butter, chilled and cubed

4 tablespoons ice water

4 ripe pears, peeled, cored, and sliced thin

½ cup brown sugar, packed

¼ cup pure maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup walnuts, toasted and chopped

1 tablespoon lemon juice

1 egg, beaten (for egg wash)

Optional: Whipped cream for serving

Instructions

Prepare the Pie Crust:

    - In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

        Preheat the Oven:

          - Preheat your oven to 375°F (190°C).

            Prepare the Filling:

              - In a large bowl, combine the sliced pears, brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg, walnuts, and lemon juice. Gently toss to coat.

                Assemble the Pie:

                  - Roll out the chilled dough on a lightly floured surface to fit your pie dish. Carefully transfer the dough into the dish, trimming any excess hanging over the edges.

                    - Pour the pear mixture into the pie crust, spreading it evenly.

                      Top the Pie:

                        - Roll out the remaining dough and cut it into strips (for a lattice crust) or simply cover the filling with another rolled-out dough round. If creating a lattice, weave the strips over the filling and trim excess. Press the edges to seal.

                          - Brush the top crust with the beaten egg for a shiny finish.

                            Bake:

                              - Bake in the preheated oven for 45-50 minutes or until the crust is golden brown and the filling is bubbling. If the edges brown too quickly, cover them with strips of foil.

                                Cool and Serve:

                                  - Once baked, remove the pie from the oven and let it cool for at least 1 hour before slicing. Serve warm or at room temperature with whipped cream if desired.
