Ingredients

4 medium carrots, sliced into fry shapes

4 medium parsnips, sliced into fry shapes

3 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon sea salt

1/2 teaspoon ground black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare Vegetables: Wash and peel the carrots and parsnips. Cut them into equal-sized fry shapes (about 1/4 inch thick) to ensure even cooking.

Make the Glaze: In a large bowl, combine olive oil, maple syrup, sea salt, black pepper, garlic powder, and smoked paprika. Mix well until all ingredients are evenly combined.

Toss the Fries: Add the carrot and parsnip fries to the bowl with the maple mixture. Toss until the vegetables are evenly coated in the glaze.

Spread on Baking Sheet: Transfer the coated fries to the prepared baking sheet in a single layer, making sure they are not overcrowded (this helps them crisp up).

Roast in Oven: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Halfway through, flip the fries with a spatula to ensure they brown evenly.

Check for Doneness: The fries are done when they are golden brown and fork-tender. If you prefer them extra crispy, you can leave them in for an additional 5 minutes, monitoring closely to prevent burning.

Garnish and Serve: Once roasted to perfection, remove the fries from the oven and let them cool slightly. Garnish with freshly chopped parsley before serving, if desired.

Enjoy: Serve hot as a delicious side dish or snack alongside your favorite dipping sauce!
