1 lb Brussels sprouts, trimmed and halved

2 cups fresh or frozen sweet corn kernels

3 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup pecans, roughly chopped (optional)

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Brussels Sprouts: In a large mixing bowl, add the halved Brussels sprouts. Drizzle with 2 tablespoons of olive oil, season with garlic powder, onion powder, salt, and pepper. Toss well to coat.

      Prepare the Corn: If using frozen corn, ensure it is thawed and drained. Add the corn kernels to the bowl with Brussels sprouts.

        Mix the Dressing: In a small bowl, whisk together the maple syrup, balsamic vinegar, and remaining 1 tablespoon of olive oil. Pour this mixture over the Brussels sprouts and corn. Toss everything together until the vegetables are evenly coated.

          Roast the Vegetables: Spread the coated Brussels sprouts and corn evenly on a large baking sheet lined with parchment paper. Make sure not to overcrowd the pan for even roasting.

            Bake: Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the Brussels sprouts are golden brown and tender, and the corn is slightly caramelized.

              Add Pecans (Optional): In the last 5 minutes of roasting, sprinkle the chopped pecans over the vegetables for added crunch.
