Ingredients

4 slices of sourdough bread

4 ounces sharp cheddar cheese, thinly sliced

4 ounces cream cheese, softened

1 medium apple (such as Honeycrisp or Granny Smith), thinly sliced

4 strips of cooked bacon, chopped

2 tablespoons pure maple syrup

2 tablespoons unsalted butter, softened

Pinch of salt

Freshly cracked black pepper (optional)

Arugula or spinach leaves (optional for added freshness)

Instructions

Prepare the Ingredients: Start by cooking your bacon until crispy and then chop it into small pieces. Slice the apple thinly and set it aside.

Mix Cream Cheese Mixture: In a small bowl, combine the softened cream cheese, maple syrup, and a pinch of salt. Mix until well combined.

Butter the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread.

Assemble the Sandwich: On the unbuttered side of two slices of bread, spread a generous layer of the cream cheese mixture. Layer on slices of cheddar cheese, followed by the chopped bacon, apple slices, and if you’re using it, a handful of arugula or spinach. Top with another slice of cheddar cheese for extra gooeyness, then cover with the second slice of sourdough, butter side out.

Grill the Sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet, cooking until golden brown and crispy on one side, about 4-5 minutes. Then, carefully flip the sandwiches and grill the other side until the cheese is melted and the bread is golden brown, another 4-5 minutes.

Slice and Serve: Remove the grilled cheese from the skillet and let it rest for a minute before slicing in half. Drizzle with a little more maple syrup if desired, and serve warm.
