Mango Salsa Grilled Chicken

For the Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt, to taste

Prepare the Chicken Marinade: In a bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, cumin, lime juice, salt, and pepper. Add the chicken breasts, making sure they are well-coated. Cover and marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

    Make the Mango Salsa: In a separate bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Toss gently until mixed. Set aside to let the flavors meld while the chicken marinates.

      Preheat the Grill: Preheat your grill to medium-high heat. If you're using a grill pan on the stovetop, heat it over medium heat and lightly oil the pan.

        Grill the Chicken: Remove the chicken from the marinade and let any excess drip off. Place the chicken on the hot grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has beautiful grill marks.
