2 cups fresh pineapple, chopped

1 cup coconut milk (full fat for creaminess)

1/2 cup Greek yogurt (optional for tanginess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tsp vanilla extract

1/4 tsp sea salt

1 cup shredded coconut (sweetened or unsweetened based on taste)

Optional toppings: extra pineapple chunks, shredded coconut, or chocolate drizzle

Instructions
 

Prepare the Pineapple:

    - Begin by cutting fresh pineapple into small chunks. If using canned pineapple, drain well and pat dry with a paper towel.

      Blend the Mixture:

        - In a blender, combine the chopped pineapple, coconut milk, Greek yogurt (if using), honey (or maple syrup), vanilla extract, and sea salt. Blend until smooth and creamy.

          Add Texture:

            - Pour the blended mixture into a bowl and fold in the shredded coconut for added texture and crunch.

              Fill the Molds:

                - Carefully pour the mixture into popsicle molds, leaving a little space at the top as the mixture will expand when frozen.

                  Insert Sticks:

                    - If your molds require them, place wooden sticks into the center of each mold.

                      Freeze:

                        - Freeze for at least 4-6 hours or until completely solid.

                          Unmold the Pops:

                            - To easily release the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove.

                              Serve and Enjoy:

                                - Optional: Dip the tops in extra shredded coconut or drizzle with melted chocolate for an extra indulgent treat. Serve immediately and enjoy a burst of tropical flavor!
