4 whole wheat pitas

1 cup marinara sauce (or pizza sauce of choice)

1 ½ cups shredded mozzarella cheese (or vegan cheese for a plant-based option)

1 small zucchini, thinly sliced

1 red bell pepper, diced

1 cup baby spinach leaves

½ cup cherry tomatoes, halved

¼ cup black olives, sliced

¼ cup red onion, thinly sliced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon garlic powder

½ teaspoon crushed red pepper flakes (optional)

Olive oil for drizzling

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prep the Pitas: Place the whole wheat pitas on the prepared baking sheet. Brush each pita lightly with olive oil to give them a nice golden color when baked.

      Spread the Sauce: Evenly spread ¼ cup of marinara sauce on top of each pita, leaving a small border around the edges for the crust.

        Add Cheese: Sprinkle about ⅓ cup of shredded mozzarella cheese on top of the sauce for each pita, ensuring it covers the sauce evenly.

          Layer the Veggies: Distribute the zucchini, red bell pepper, spinach, cherry tomatoes, black olives, and red onion evenly across the pitas, creating a colorful and hearty topping.

            Season the Pizzas: Sprinkle the oregano, basil, garlic powder, and optional crushed red pepper flakes over the veggie toppings for added flavor.

              Final Cheese Layer: Top each loaded pita with an additional sprinkle of mozzarella cheese to help hold the toppings together during baking.

                Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the pitas are golden brown.

                  Garnish and Serve: Remove the pitas from the oven, let them cool for a minute, then garnish with fresh basil leaves. Slice them into wedges and serve warm.
