Ingredients
  

1 cup of uncooked long-grain rice

2 cups of chicken or vegetable broth

1 pound ground beef (or turkey)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 packet (1 oz) taco seasoning

1 cup cherry tomatoes, halved

1 cup bell peppers, diced (any color)

1 cup onion, chopped

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Optional toppings: sliced jalapeños, avocado, lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, combine the uncooked rice and chicken or vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15-18 minutes, or until the rice is cooked and the liquid is absorbed.

      Brown the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned and no longer pink, breaking it up as it cooks. Drain any excess fat.

        Add Vegetables: Add the chopped onion and bell peppers to the skillet with the meat. Sauté for about 5 minutes until the vegetables are softened.

          Add Beans and Corn: Stir in the black beans, corn, taco seasoning, and cherry tomatoes. Cook for an additional 2-3 minutes until everything is heated through. Season with salt and pepper to taste.

            Combine Rice and Meat Mixture: In a large mixing bowl, combine the cooked rice and the seasoned meat mixture. Stir until evenly mixed.

              Layer the Casserole: Spread half of the rice mixture into the bottom of a greased 9x13 inch casserole dish. Add half of the sour cream on top, followed by half of the cheddar and Monterey Jack cheese. Repeat the layers with the remaining rice mixture, sour cream, and end with the remaining cheese on top.

                Bake the Casserole: Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

                  Garnish and Serve: Once baked, remove the casserole from the oven. Let it cool for a few minutes. Sprinkle freshly chopped cilantro on top and add any optional toppings such as jalapeños, avocado, or lime wedges.
