Loaded Nacho Tater Tots

32 oz frozen tater tots

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, drained and rinsed

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced jalapeños (pickled or fresh, according to preference)

1/4 cup chopped green onions

1/4 cup sour cream

1/4 cup guacamole

1 tbsp taco seasoning

Salt and pepper to taste

Fresh cilantro for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Bake the Tater Tots: Spread the frozen tater tots in a single layer on a large baking sheet. Bake in the preheated oven according to package instructions, usually about 25-30 minutes, or until golden and crispy.

      Prepare the Toppings: While the tater tots are baking, in a bowl, mix the drained black beans with taco seasoning. Set aside. If using fresh tomatoes, dice them. Prepare other toppings: slice jalapeños and chop green onions.

        Layer the Toppings: Once the tater tots are done baking, remove them from the oven. Carefully sprinkle the taco seasoned black beans over the tater tots, followed by the diced tomatoes, sliced jalapeños, and both cheeses.

          Melt the Cheese: Return the loaded tater tots to the oven for an additional 5-7 minutes, or until the cheese has melted and is bubbly.

            Garnish: Remove from the oven and sprinkle chopped green onions and cilantro on top for freshness.

              Serve: Serve the loaded nacho tater tots immediately with a side of sour cream and guacamole for dipping.
