Loaded Baked Potato Breakfast Skillet

4 medium russet potatoes

6 strips of bacon, chopped

1 red bell pepper, diced

1 small onion, diced

4 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

2 green onions, thinly sliced

Salt and black pepper, to taste

Olive oil, for frying

Optional: Hot sauce for serving

Prepare the Potatoes: Wash and scrub the russet potatoes. Prick them with a fork and microwave them for about 8-10 minutes until tender. Let cool slightly, then dice into bite-sized pieces.

    Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

      Sauté Veggies: In the same skillet, add the diced onion and red bell pepper to the bacon grease. Sauté until the vegetables are soft and fragrant, about 4-5 minutes.

        Combine Ingredients: Add the diced potatoes to the skillet with the sautéed vegetables. Stir well to coat with the remaining bacon fat. Season with salt and pepper. Cook until the potatoes are golden brown and crispy, about 8-10 minutes.

          Prepare Eggs: In a separate bowl, whisk the eggs and season with salt and pepper. Create small wells in the potato mixture and pour the beaten eggs into the wells. Cover the skillet and cook until the eggs are set to your desired doneness, about 3-5 minutes.

            Add Cheese and Bacon: Once the eggs are almost set, sprinkle the crispy bacon and shredded cheddar cheese over the top. Cover again and let cook until the cheese melts, about 2-3 minutes.

              Serve: Remove from heat and dollop sour cream over the skillet. Garnish with sliced green onions and drizzle with hot sauce if desired. Serve warm and enjoy!
