Lentil and Sweet Potato Stew

1 cup green or brown lentils, rinsed and drained

1 large sweet potato, peeled and diced into 1-inch cubes

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes (with juices)

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

2 cups fresh spinach

Juice of 1 lemon

Fresh parsley or cilantro for garnish

Sauté the base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots, and sauté for about 5 minutes until the onion is translucent.

    Add garlic and spices: Stir in the minced garlic, ground cumin, smoked paprika, dried thyme, salt, and black pepper. Cook for an additional minute until fragrant.

      Combine vegetables: Add the diced sweet potato, celery, and rinsed lentils to the pot, and stir to combine everything well.

        Incorporate liquids: Pour in the diced tomatoes (with juices) and vegetable broth. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 25-30 minutes, or until the lentils and sweet potato are tender.

          Final touches: Once the stew has thickened and the lentils are cooked, stir in the fresh spinach and juice of one lemon. Allow the spinach to wilt for about 2 minutes.

            Serve: Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley or cilantro.
