Lemon & Shrimp Salad Bowl

Ingredients
  

1 lb large shrimp, peeled and deveined

4 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

2 tbsp olive oil

2 cloves garlic, minced

Zest and juice of 2 lemons

Salt and pepper to taste

1 tsp paprika

1/4 cup feta cheese, crumbled (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, minced garlic, lemon zest, lemon juice, paprika, salt, and pepper. Allow it to marinate for about 15-20 minutes.

    Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from the heat and set aside.

      Prepare the Salad Base: In a large salad bowl, add the mixed greens as the base.

        Add Vegetables: Layer the cherry tomatoes, avocado, cucumber, and red onion over the mixed greens.

          Top with Shrimp: Once the shrimp are cooled slightly, place them on top of the salad.

            Finish with Feta and Parsley: If using, sprinkle the crumbled feta cheese over the top and garnish with freshly chopped parsley.
