Lemon Herb Roasted Chicken Thighs

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Zest and juice of 1 large lemon

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon dried oregano

Salt and black pepper, to taste

1 cup chicken broth

Lemon slices (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and prepare a baking dish or a large cast-iron skillet.

    Prepare the Marinade: In a mixing bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, oregano, salt, and black pepper until well combined.

      Marinate the Chicken: Place the chicken thighs in a large zip-top bag or a shallow dish and pour the marinade over them. Ensure the chicken is well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, preferably for 2 hours to allow flavors to infuse.

        Sear the Chicken: Heat a large skillet (if using one) over medium-high heat. Remove the chicken from the marinade (reserve the marinade), and place skin-side down in the skillet. Sear each thigh for about 4-5 minutes until the skin is golden brown and crispy. Turn and sear the other side for 2-3 minutes. This step can be skipped if using a baking dish.

          Transfer to Oven: If you seared the chicken, transfer it directly to your baking dish. If not, simply place the marinated chicken thighs in the baking dish skin-side up. Pour the reserved marinade and chicken broth around the chicken, ensuring not to pour it directly on top.

            Roast the Chicken: Roast in the preheated oven for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear. If the skin isn’t crispy enough, you can broil it for an additional 2-3 minutes at the end.

              Rest and Serve: Remove the chicken from the oven and let it rest for 5-10 minutes. Garnish with lemon slices and chopped parsley before serving. Enjoy with your favorite side dishes, like roasted vegetables or creamy mashed potatoes!
