Ingredients

1 pound fresh green beans, trimmed

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice (about 1 lemon)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon honey (or maple syrup for vegan option)

Salt and freshly ground black pepper, to taste

1/4 cup cherry tomatoes, halved

1/4 cup sliced red onion

1/4 cup feta cheese, crumbled (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Blanch the Green Beans: Fill a large pot with water and bring it to a boil. Add a generous pinch of salt. Once boiling, add the trimmed green beans and cook for about 3-4 minutes until they are vibrant green and crisp-tender.

Ice Bath: Prepare a bowl of ice water. Once the green beans are done, immediately transfer them to the ice bath to stop the cooking process. Let them sit for about 2-3 minutes, then drain and pat dry.

Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, honey (or maple syrup), and a pinch of salt and pepper until well combined.

Combine the Salad: In a large mixing bowl, add the cooled green beans, cherry tomatoes, sliced red onion, and feta cheese (if using). Drizzle the dressing over the top and toss gently until everything is coated evenly.

Serve: Transfer the salad to a serving platter or bowl. Garnish with chopped fresh parsley for a pop of color.

Chill (Optional): For the best flavor, let the salad sit in the refrigerator for about 15-30 minutes before serving to allow the flavors to meld. However, it's also delightful served immediately.

Enjoy: This refreshing salad pairs well with grilled meats, is perfect for picnics, or can be enjoyed as a light lunch on its own!
