Lemon Dill Roasted Chicken Pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Zest and juice of 1 large lemon

2 teaspoons dried dill (or 2 tablespoons fresh dill, chopped)

3 cloves garlic, minced

Salt and pepper to taste

8 ounces spaghetti or fettuccine pasta

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup grated Parmesan cheese

1/4 cup heavy cream (optional for creamier sauce)

Fresh dill for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Chicken: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dill, salt, and pepper. Add the chicken breasts, ensuring they're well-coated. Let them marinate for at least 15 minutes while you prepare the rest of the dish.

      Roast the Chicken: Place the marinated chicken breasts on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C). Remove from the oven and let it rest for 5 minutes before slicing.

        Cook the Pasta: While the chicken is roasting, bring a large pot of salted water to a boil. Cook the spaghetti or fettuccine according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

          Sauté the Vegetables: In a large skillet, over medium heat, add a splash of olive oil. Sauté the cherry tomatoes for 3-4 minutes until they begin to soften. Add the baby spinach and cook until wilted, about 1-2 minutes.

            Combine Ingredients: Add the drained pasta to the skillet with the tomatoes and spinach. Slice the roasted chicken and add it to the pasta. If using, pour in the heavy cream and toss everything together to combine. If the mixture seems dry, add a bit of the reserved pasta water until you achieve your desired consistency.
