Ingredients

2 slices of thick sourdough bread

1 cup cooked chicken breast, shredded (rotisserie works great)

1/2 cup marinara sauce

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 tablespoons butter

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Prep the Chicken Mixture: In a bowl, combine the shredded chicken, marinara sauce, mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until all ingredients are well-combined.

Assemble the Sandwich: Take one slice of sourdough bread and spread half of the chicken mixture evenly on top. Place the second slice of bread on top to create a sandwich.

Butter the Bread: Spread one tablespoon of butter on the outside of each slice of bread to ensure a golden, crispy crust when grilled.

Grill the Sandwich: Heat a skillet over medium heat. Once hot, carefully place the sandwich in the skillet. Grill for about 3-4 minutes or until golden brown.

Flip and Cook: After the first side is grilled, gently flip the sandwich and cook for another 3-4 minutes, pressing down slightly to help the bread crisp up and the cheese melt.

Check for Melting: When both sides are nicely toasted and the cheese is melted, remove the sandwich from the skillet. Optional: Sprinkle with additional Parmesan cheese and place it back on the skillet for an extra minute to melt.

Serve: Slice the sandwich in half and garnish with fresh basil leaves if desired. Serve warm with extra marinara sauce on the side for dipping.
