Kielbasa and Veggie Sheet Pan

1 lb kielbasa, sliced into ½-inch rounds

2 cups broccoli florets

1 cup bell peppers (red, yellow, or green), sliced

1 cup carrots, sliced into thin rounds

1 medium red onion, cut into wedges

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easier cleanup.

    Prepare the Veggies: In a large mixing bowl, combine the broccoli, bell peppers, carrots, and red onion. Drizzle with 1 tablespoon of olive oil, add the minced garlic, smoked paprika, oregano, black pepper, and a pinch of salt. Toss everything together until the vegetables are evenly coated.

      Arrange on the Pan: Spread the seasoned veggies evenly across one side of the prepared sheet pan.

        Prep the Kielbasa: In the same mixing bowl, add the sliced kielbasa and drizzle with the remaining tablespoon of olive oil. Toss until well coated and seasoned.

          Add Kielbasa to the Pan: Place the kielbasa on the other side of the sheet pan, arranging it in a single layer for even cooking.

            Bake: Place the sheet pan in the preheated oven and bake for about 25–30 minutes, or until the veggies are tender and slightly caramelized, and the kielbasa is heated through with golden edges.

              Garnish and Serve: Once cooked, remove the sheet pan from the oven. Garnish with freshly chopped parsley, and serve hot. This dish pairs perfectly with crusty bread or over rice for a hearty meal!
