Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

Zest of 1 large key lime

1/4 cup key lime juice (freshly squeezed)

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups sweetened shredded coconut

1 cup white chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Add Eggs and Flavorings: Beat in the eggs one at a time, followed by the vanilla extract, key lime zest, and key lime juice. Mix until fully combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just incorporated.

Fold in Coconut and Chocolate: Gently fold in the shredded coconut and white chocolate chips until evenly distributed throughout the dough.

Scoop the Cookies: Using a cookie scoop or tablespoon, drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are still soft. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Serve and Enjoy: Once cooled, serve these delicious cookies as a tropical treat that brings a taste of the beach to your home!
