4 cups diced potatoes (fresh or frozen, thawed)

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup sour cream

1 can (4 oz) diced jalapeños, drained

1/2 cup cooked and crumbled bacon (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup panko breadcrumbs

2 tablespoons melted butter

Chopped green onions, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Prepare the Potato Mixture: In a large bowl, combine the diced potatoes, cream cheese, sharp cheddar, mozzarella, sour cream, diced jalapeños, bacon (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

      Transfer to Baking Dish: Pour the potato mixture into the prepared baking dish, spreading it evenly.

        Make the Topping: In a small bowl, combine the panko breadcrumbs with the melted butter. Stir until the breadcrumbs are evenly coated.

          Add Topping: Evenly sprinkle the breadcrumb mixture over the potato casserole for a crunchy topping.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy, and the potatoes are tender.

              Cool and Serve: Once baked, remove from the oven and let it cool for about 5-10 minutes. Garnish with chopped green onions, if desired, and serve warm.
