2 cups cooked chicken, shredded

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup pickled jalapeños, chopped (adjust to taste)

1/2 cup panko breadcrumbs

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    Prepare Chicken Mixture: In a large mixing bowl, combine the shredded chicken, softened cream cheese, sour cream, half of the cheddar cheese, half of the mozzarella cheese, chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.

      Transfer to Baking Dish: Spread the chicken mixture evenly into the prepared baking dish. Use a spatula to smooth the top.

        Add Toppings: In a small bowl, mix the panko breadcrumbs with olive oil until the breadcrumbs are evenly coated. Sprinkle the coated breadcrumbs over the chicken mixture. Then, top with the remaining cheddar and mozzarella cheese.

          Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden brown.
