Italian Sausage Stuffed Peppers

4 large bell peppers (any color)

1 pound Italian sausage (mild or spicy, your choice)

1 cup cooked rice (white or brown)

1 can (14.5 oz) diced tomatoes (with juices)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.

      Cook the Sausage: In a skillet over medium heat, add the Italian sausage. Use a wooden spoon to break it apart as it cooks. Sauté until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

        Sauté Veggies: Add the chopped onion and minced garlic to the skillet with the sausage. Cook for an additional 2-3 minutes until the onion turns translucent.

          Mix the Filling: In a large bowl, combine the cooked sausage mixture, cooked rice, diced tomatoes (with juices), mozzarella cheese, oregano, basil, crushed red pepper flakes, salt, and pepper. Stir until well combined.

            Stuff the Peppers: Carefully spoon the sausage filling into each bell pepper until they are generously filled. Pack the filling slightly but avoid overstuffing.

              Bake: Pour a small amount of water into the bottom of the baking dish to steam the peppers while they cook. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

                Uncover and Top with Cheese: After 20 minutes, remove the foil and sprinkle additional mozzarella cheese on top of each pepper if desired. Bake uncovered for another 15-20 minutes or until the peppers are tender and the cheese is bubbly and golden.

                  Serve: Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
